Roast Chicken roast chicken
4 lb chicken (cut in segments, optional)
4 Tbsp chicken fat (may substitute butter or margarine)
1 onion, chopped
1 tsp salt
1/4 tsp pepper
1/2 tsp paprika
1/2 tsp garlic powder or chopped garlic glove
3 carrots, peeled and sliced
3 potatoes, peeled and sliced
2 cups boiling water

Rinse chicken then rub with chicken fat (or butter/margarine). Flavor the chicken with salt, pepper, paprika, and garlic. Place chicken in roasting pan, add water, combine onion, carrots, potatoes. Cover and cook at 325º for 1 1/2 hours.
